This is a delicious light snack or add a salad and side for a main meal. It’s simple to put together and packed full of flavour.

Ingredients:
- 1 clove garlic, peeled and minced
- 2 tbsp chopped onion
- 1/2 tbsp extra virgin olive oil
- 1 lime, juiced
- 1/2 tsp ground cumin
- Seasalt and black pepper to taste
- 1 (4 oz/112 g) halibut fillet
- 1 1/2 cups shredded red cabbage
- 1 corn tortilla, whole wheat wrap or gluten-free wrap
- 2 tbsp full-fat yogurt (Mediterranean yogurt works best) or coconut yogurt
- 2 tbsp Raw Salsa or regular salsa
- Fresh cilantro (chopped)
Makes 1 serving - 2 Tacos
Directions
Mix the garlic, onion, olive oil, lime juice, cumin, sea salt and pepper in a bowl and place the halibut fillet in a flat dish then cover with the marinade. Chill in the refrigerator for an hour.
Heat a medium skillet over medium heat. Add oil and fry up the cabbage to desired doneness, place in a serving bowl then add the fillet with the marinade and cook on each side until the fish is opaque and flakes with a fork.
Heat the tortilla in an unoiled skillet on medium heat for about 20 seconds.
Build your taco the way you like it will all the ingredients and don’t forget to garnish with cilantro before serving.
